Yoghurt, almond & lemon cake

This was absolutely delicious, and so moist!

In a bowl, mix together 150g of yoghurt, 3 eggs, 110ml of sunflower oil and the juice of a lemon & rind. In another bowl mix together the dry ingredients: 180g of caster sugar, 180g of plain flour, 20g of almond flour, 2tsp of baking powder and a pinch of salt. Now combine all ingredients together and whisk until it’s all combined. Now scoop the mixture into your baking tin (I used a loaf tin) and sprinkle with some almond flakes!
