Banoffee Cake

Banoffee Cake! This was an absolute treat to eat (and make!) Is there a better combination of Bananas, Camel and a soft vanilla icing?!
To make this, I firstly whipped together 300g of Demerara sugar & 300g of butter. I then cracked in 4 eggs and whipped together. Sifted in 270g of plain flour, 2tsp of bicarbonate of soda & 2tsp of baking powder. Fold this all together. Now in another bowl mash 2 ripe bananas and mix together. Bake in the oven for 30 minutes at 180. Then leave to cool.
For the icing I used 500g of icing sugar and 50g of butter and a splash of milk! Whip them using a free standing whisk for 5 minutes until light and soft. I then added in a table spoon full of Carmel and mixed.
For the Carmel layer I used a tin of @carnation_uk Carmel. I slathered a layer of Carmel on to one half of the cake. Now slice a banana and layer on top of the Carmel. Dollop some buttercream onto the other side of the cake and sandwhich together!! I added some more icing and camel and banana to the top! Let me know what you think? Love Mollie x.
