Valentines Paccheri Mascapone Delight (Serves 4)

Valentine’s Day is fast approaching so why not make my mascarpone, mozzarella butternut squash pasta dish! It is sure to make Valentines, galentine, Palentine even more special ❤️ To make this dish you will need, one pack of mascarpone cheese, a ball of mozzarella, a hand full of Parmesan, the rind of a lemon, 1/3 of a butternut squash, and Paccheri Pasta tubes. (And a traditional marinara sauce.) I started by cubing the butternut squash and roasting it in the over at 180 for 15 minutes. Whilst the squash is cooking, mix together allll the cheeses! (At this point you can cook a garlic cloves and some spring onion & add it to the cheeses)Then add in the rind of a lemon and lots of pepper & a pinch of salt. Once the butternut squash has cooked mix it through the cheesy bowl. Now to cook the pasta, you want to part cook this- and then wash it with cold water to stop it cooking! (Is there anything worst that soggy over cooked pasta?!.) To assemble I used my @lecreusetuk heart shape casserole dish - then added a layer of the Marinara sauce, and then stood the tubes up around the dish. Using a piping bag, pipe the cheesy mix into the pasta tubes. I then added a good amount of black pepper and some bay leaves and cooked in the oven at 180 for 20/25 minutes.
