Lobster Linguine

We fancied a little treat this weekend.. so I made lobster linguine courtesy of Waitrose.

Once cooked, I cut the lobster in half, scooped out the flesh and removed the head (but kept the shell). Then I simply minced one garlic clove to cook in a tablespoon full of butter and a drizzle of olive oil before adding the meat to season. I added a good splash of cream and cooked further until it started to bubble. Finally I refilled the lobster shells with the creamy mixture and served on linguine & rocket!
