Paella (Serves 2)

Paella influenced by my Spanish family.
Ingredients:
2 chicken breasts diced & dusted in paprika
3 garlic cloves
1 onion
1 red pepper
3 spring onions
Chorizo
Prawns
Paella rice (200g - portion for 2 people)
650ml of chicken or fish stock
Saffron
Peas
S&P
Lemon
Method:
Cook the chicken in a good drizzle of oil. Once browning add the onion, garlic, diced red pepper, spring onion & chorizo
Add the paella rice & stock & saffron and leave to simmer for around 20 minutes - stirring occasionally.
Now add the prawns (if you can source fresh squid & mussels amazing - sadly I couldn’t!) & add the peas.
Now place a lid on top & simmer again for a further 10 minutes!
To serve chop a good handful of parsley, squeeze a little lemon & additional lemon chunks .. VOILÁ!
