One Pan Cheesy MeatBalls (Serves 2)

One pan cheesy meatballs:

This was a huge hit and again took very little time!


Ingredients:

Pork and beef mince

1 egg

Breadcrumbs

S&P

Passata

Oregano

Garlic

Paprika

Chilli flakes

Feta

Cheddar cheese

Basil

Bay leaf


Method:

Simply mix the mince meats, egg and breadcrumbs together & season. Roll into small walnut size balls. Add them to a frying pan with a little oil. Whilst the meatballs are cooking mix the passata, oregano, garlic & paprika in a bowl. Once the meatballs have been seared remove and place to the side. To the same pan add in the tomato sauce and cook for 5 minutes until bubbling. Once you have a rolling boil add in the meatballs, sprinkle the feta and bake in the over for 10 minutes (at 180) Then add in the cheddar cheese, basil & bake for 5 more minutes. Serve with some crunchy sourdough (I get mine from @theoldpostofficebakery ) Love Mollie x.
