Bacon and Egg Rosti: (serves 1)

Ingredients:
1 Potato
2 Spring Onions
2 Rations of bacon
1 egg
Method:
Start by peeling and then grating your potato. Once you have grated the potato, drain the juices. You can do this by either squeezing the grated potato using your hands or you can use a muslin cloth. Once you have removed the majority of the juice, add in some olive oil and Salt. Slice up the bacon and spring onions and then add them to a frying pan cook.
Once the bacon and spring onions have cooked add them to the potato mix and stir. Create a patti shape and fry the potato until it is golden and crisp on both sides. Fry a egg and top the Rosti.
Serve the Rosti with some (optional) chili flakes, spring onion, pepper and salt.
