Avocado Shakshuka (Serves 2)

Ingredients:
1 Onion
½ Avocado
Spinach (handful)
Tinned Tomato
2 Eggs
Spring Onions
Paprika
Chilli flakes
Method:
Start by cutting up the onion into small chunks. Add them to a frying pan with a sprinkling of Paprika, Hot Paprika, Chilli Flakes and cumin. Cook until the onions have softened. Next add in a tin of tomatoes and cook for a further 2 min. Then add in the spinach.
Once the tomato liquid has reduced create two wells in the pan and crack in the eggs. Then place over the top the sliced Avocado and cover with a lid for 4 minutes. I served mine with some pita bread, spring onion, chili flakes and seasoning.
