Roasted Root vegetables on a bed of butter bean hummus.
Butter bean hummus (a great alternative to chickpea hummus)
1 tin of butter beans
1 tsp tahini
2 garlic cloves
1/2 teaspoon cumin
Drizzle of olive oil
Splash of water
And simply blitz them all together in a blender until smooth.
For the veggies, I marinated them in salt, pepper and cumin & olive oil. Roast them at 180 for 40 mins.
This can be served as a light lunch or a side dish.
